Boston Baked Beans - cooking recipe

Ingredients
    4 c. dried pea beans
    2 qt. water
    1/2 lb. salt pork
    1 Tbsp. salt
    1 c. molasses
    2 tsp. dry mustard
Preparation
    Put beans into a deep kettle.
    Cover with water; bring to a boil and boil for 2 minutes.
    Remove from heat; let stand 1 hour. Return to heat; cook for 5 minutes, or until skin splits.
    Drain; reserve the water.
    Cover the salt pork with boiling water; let stand for 5 minutes.
    Drain the water; save it to put in beans. Cut salt pork.
    Put the beans in the bean pot.
    Press the pork into the beans.
    Mix salt, molasses and mustard.
    Add 1 cup of the reserved water; bring to a boil.
    Pour this mixture over the beans and pork.
    Add enough water to cover beans.
    Cover pot.
    Bake at 250\u00b0 for 6 to 8 hours.
