Senate Restaurant Bean Soup - cooking recipe

Ingredients
    1 1/2 lb. navy, lima or dried peas, washed
    2 Tbsp. butter
    4 large yellow onions, chopped
    1 large clove garlic, chopped
    6 sprigs parsley
    3/4 tsp. thyme
    1 1/2 large bay leaves
    1 carrot, chopped
    1/2 lemon, sliced
    1 lb. smoked ham pieces
    freshly ground pepper
    1 Tbsp. salt
Preparation
    Day 1:
    Soak beans in a large bowl covered with water to a depth of 4 to 5-inches.
    Let soak overnight.
