Ingredients

1 1/2 lb. fresh carrots, cut in lengthwise strips
1/3 c. brown sugar, packed
1/2 tsp. salt
1/2 tsp. grated orange peel
2 Tbsp. margarine
Preparation

Heat 1 inch of salted water (1/2 teaspoon of salt to 1 cup of water) to boiling.
Add carrots; cover and heat to boiling.
Cook until tender (25 minutes for whole, 5 minutes for shredded, 18 to 20 minutes for lengthwise strips or 12 to 15 minutes for crosswise slices); drain.
