Lentil Soup With Kielbasa - cooking recipe

Ingredients
    1 Tbsp. vegetable oil
    1 lb. kielbasa, cut into 1/4-inch thick pieces
    1 1/2 c. coarsely chopped onion
    1 c. coarsely chopped carrots
    1/2 c. coarsely chopped celery
    1 1/4 c. dried lentils, sorted and rinsed
    1 c. canned chopped tomatoes and their juice
    4 c. water
    3 Tbsp. Watkins bean soup seasoning blend
    1 Watkins bay leaf
    1/8 tsp. Watkins black pepper
Preparation
    In large saucepan or Dutch oven, brown kielbasa in hot oil until lightly browned, about 5 minutes.
    Drain on paper towel, removing all but 1 tablespoon of drippings from pan.
    Saute the onion, carrots and celery in these drippings until onion is tender, about 5 minutes.
    Add remaining ingredients and bring to a boil. Cover and reduce heat; simmer 40 to 50 minutes or until lentils are tender.
    Discard bay leaf before serving.
    Makes 6 servings.
