Apple-Raisin Muffins - cooking recipe

2 c. all-purpose flour
1/2 c. packed brown sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. salt
3/4 c. buttermilk
1/2 c. unsweetened applesauce
2 egg whites
2 Tbsp. canola oil
1 c. chopped, peeled apples
1/3 c. dark seedless raisins
Preparation

Preheat oven to 400\u00b0.
Coat 12 muffin tin with nonstick vegetable spray.
Combine flour, sugar, baking powder, baking soda, cinnamon and salt in large bowl.
Make well in center.
Stir together buttermilk, applesauce, egg whites and canola in a small bowl.
Pour mixture into well of dried ingredients.
Stir until evenly moistened.
Gently fold in apples and raisins.
Divide batter evenly among 12 muffin tins.
Bake at 400\u00b0 for 25 minutes or until toothpick comes out clean.
Cool on wire rack.
Each muffin contains 152 calories and 3 g. fat.
