Sour Cream Potato Soup - cooking recipe

Ingredients
    2 c. diced potatoes
    1 c. boiling water
    1 small onion, sliced
    2 c. sour cream
    minced parsley
    salt and pepper to taste
Preparation
    Combine potatoes, water, salt, pepper and onion; simmer, covered, for 15 minutes.
    Add cream and cook, uncovered, until potatoes are tender, about 5 minutes longer.
    Serve garnished with parsley.
    Makes 6 servings.
