Chicken In A Nest - cooking recipe

Ingredients

2 to 4 chicken breasts (deboned)
1 c. white wine
1 onion, chopped
salt and pepper to taste
1 sprig rosemary
1 sprig basil
1 lb. spinach

Preparation

Bring to a boil the wine, onion rosemary and basil.
Add chicken, salt and pepper.
Cook until tender, about 60 minutes. Boil spinach.
Put chicken on top of spinach.
Serves 4.
