Italian Chicken Over Rice - cooking recipe

Ingredients
    4 boneless, skinless chicken breasts
    2 Spanish onions
    1 large green pepper
    1 lb. fresh mushrooms
    2 fresh ripe tomatoes
    1 (16 oz.) bottle Viva Italian dressing
    2 Tbsp. cayenne pepper
    fresh grated Parmesan cheese
Preparation
    While your rice is cooking, turn on your oven broiler.
    Chop up onions and green pepper and mix with 1/2 bottle Italian dressing.
    Pour into baking pan and place under broiler.
    Cut up chicken into bite size pieces and wash and slice mushrooms.
    Add chicken to pan with onions and green pepper and pour in rest of dressing.
    Broil about 8 minutes.
    Add mushrooms and cayenne pepper; broil about 5 minutes.
    Add tomatoes; stir well to coat and broil 5 minutes.
    Serve over cooked rice; sprinkle with fresh Parmesan cheese.
