Rice Bundles(Riso Fagottini) - cooking recipe

Ingredients
    1 c. cooked rice
    2 c. roast beef or ham, minced (cooked)
    1/2 c. Parmesan cheese
    3 slices bread, soaked in milk and minced
    1/4 c. bread crumbs
    1 Tbsp. parsley, minced
    2 eggs
    salt and pepper to taste
    1 clove garlic, minced
    olive oil for frying
Preparation
    Mix all ingredients in
    large
    bowl and mix well.
    Feel with your hands to see if
    mixture
    will form 2-inch logs.
    If not firm enough, add a little
    more
    cheese
    and
    a few tablespoons of bread crumbs.
    As
    you
    form
    logs,
    roll
    in
    bread crumbs and place on large platter.
    When complete, refrigerate for 1 hour. Heat oil in
    skillet and place bundles in hot oil to brown, turning carefully.
    Drain
    on paper towels and serve on platter with a little sprinkle of Parmesan cheese.
    Makes 6 to 8 servings.
