Scottish Skillet Potatoes - cooking recipe

Ingredients
    2 Tbsp. bacon fat, margarine or butter
    1/2 tsp. salt
    1/4 tsp. pepper
    1/4 c. snipped parsley
    3/4 c. water
    6 medium potatoes (about 2 lb.), thinly sliced
    2 medium onions
Preparation
    Heat
    bacon
    fat in a 10-inch skillet until hot.
    Layer half each of the potato and onion slices in skillet.
    Sprinkle with half each of the salt, pepper and parsley.\tRepeat.
    Add water. Cover
    and\tsimmer\tover
    low
    heat until potatoes are tender and liquid is absorbed, about 30 minutes.
    Add water if necessary. Serves 6.
    (Optional:
    brown small pieces of bacon to
    sprinkle on each layer.)
