8 lb. shoulder pork*
2 lb. veal*
7 tsp. salt
2 tsp. pepper
1 c. water
6 tsp. crushed marjoram (no stems)
2 tsp. mustard seed (if desired)
6 cloves garlic
Preparation

*Use 10 pounds meat.
You can use all pork if you want.
