Pork Chop Casserole - cooking recipe

Ingredients
    6 pork chops, cut about 1-inch thick
    3 Tbsp. shortening
    6 slices onion, cut in about 1/4-inch thick rings
    6 slices bell pepper, cut into about 1/4-inch thick rings
    12 Tbsp. rice (quick-cooking)
    1 (No. 2) can tomato juice
    1 c. celery, diced
Preparation
    Heat shortening.
    Season and brown pork chops on both sides. Place chops in greased oven dish.
    Place onion rings and bell pepper on each chop.
    Fill each ring with about 2 tablespoons rice.
    Pour tomato juice around in dish.
    Cover with celery. Cover and bake at 350\u00b0 for about 1 hour or until done.
