Classic Red Beans - cooking recipe

Ingredients
    1 lb. bag red kidney beans
    8 c. water
    1 lb. pkg. smoke sausage, sliced 1/4 inch thick
    2 Tbsp. bay leaves
    1 large onion, chopped
    1/2 bell pepper, chopped
    4 cloves garlic
    1 1/4 tsp. salt
    1 tsp. Tabasco pepper sauce
Preparation
    Wash beans in a strainer and discard any grit or discolored beans.
    Put beans and the rest of the ingredients in an 8-quart pot.
    Bring to a boil.
    Cover and reduce heat to simmer.
    Stirring often, cook beans about 2 1/2 hours or until beans are tender and creamy.
    Serve over fluffy long grain rice.
    You can also put a good dollop of sour cream on top of your serving of red beans and rice.
    It's delicious!
