Oat Bran Muffins - cooking recipe

Ingredients
    2 1/2 c. oat bran cereal
    1/4 c. nuts and/or dried fruits (i.e., raisins, etc.)
    1 Tbsp. baking powder
    1/4 c. brown sugar
    1 1/4 c. skimmed milk
    1 egg white
    2 Tbsp. vegetable oil
    1/4 c. sour cream
    1 tsp. baking soda
    1/2 c. butter, softened
    1 1/4 c. sugar
    2 eggs
    1 1/2 c. flour
    pinch of salt
    1 c. coarsely mashed bananas
    1 c. semi-sweet chocolate chips
    1 tsp. vanilla
Preparation
    In a
    small bowl, stir together the sour cream and baking soda; set aside.
    Cream butter with sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.
    Beat in sour cream mixture.
    Stir in remaining ingredients until dry ingredients are just blended.
    Do not overmix.
    Divide mixture between 3 mini loaf pans (6 x 5 x 2-inch) and bake in a 350\u00b0 oven for 40 minutes or until toothpick inserted comes out clean.
    Allow to cool in pans 15 minutes and then remove from pans and continue cooling on a rack.
    Yields 3 mini loaves.
