Jicama Coleslaw - cooking recipe

Ingredients
    2 c. shredded radicchio or red cabbage
    1/2 c. grated carrots
    1 medium jicama, peeled and julienned
    1 red bell pepper, julienned
    1 yellow bell pepper, julienned
    1 small onion, grated
    1 jalapeno, seeded and minced
    1/2 c. mayonnaise
    1 Tbsp. honey
    1 Tbsp. raspberry vinegar
    1 Tbsp. fresh lemon juice
    salt and freshly ground black pepper to taste
Preparation
    Thoroughly combine all the ingredients in a large mixing bowl. Refrigerate before serving.
    Makes 4 servings.
