Irish Soda Bread - cooking recipe

3 c. flour, sifted
1/4 c. sugar
1 tsp. baking powder
1 tsp. baking soda
dash of salt
1 1/2 c. raisins or currants
2 large eggs, beaten
1 1/2 c. buttermilk
1 1/4 Tbsp. caraway seed (optional)
3 Tbsp. melted butter
Preparation

Sift flour, sugar, baking powder and baking soda.
Soak raisins in hot water, drain.
Combine eggs, buttermilk and butter.
Add egg mixture to flour mixture.
Add raisins and caraway seed.
Mix just until moistened.
Don't overmix.
Bake in greased loaf pan at 325\u00b0 for one hour.
