Effortless Enchiladas - cooking recipe
Ingredients

12 corn tortillas
1 can cream of chicken soup
1 (7 oz.) can green chiles
1 red pepper, chopped
2 c. sour cream
3 lb. cooked chicken/turkey
3/4 lb. Monterey Jack, shredded
Preparation

In medium bowl, combine soup, chiles, red pepper and sour cream.
Whisk well.
Separate and set aside 1 cup.
Mix chicken/turkey into remaining mix in medium bowl.
Spoon 2 tablespoons of mix at each end of tortilla.
Sprinkle each with cheese.
Roll up and arrange in a shallow baking dish just large enough to hold enchiladas in single layer.
Pour remaining cup of sour cream mix over enchiladas.
Sprinkle with cheese.
Bake at 350\u00b0 for 30 minutes.
