Chicken In Madeira Wine(By Francoise Gilbert) - cooking recipe

Ingredients
    1 lb. boneless chicken breasts, cut into 1/2-inch cubes
    1 Tbsp. flour
    salt and pepper
    2 Tbsp. vegetable oil
    1 large onion, halved and sliced
    1/2 lb. mushrooms, thinly sliced
    3 Tbsp. Madeira wine
    1/3 c. heavy cream or nondairy creamer
    1/2 c. chicken broth
    cooked noodles
    1 Tbsp. minced fresh parsley
Preparation
    Rinse and pat dry the chicken.
    Toss with flour, salt and pepper to taste.
    Brown chicken in heated oil until brown. Transfer to a clean bowl.
    Saute thinly sliced onion and mushrooms for 2 or 3 minutes.
    Add wine, scraping pieces at bottom of pan. Return chicken to pan; add cream and broth (or creamer).
    Bring to boil; cook until thickened.
    Spoon chicken mixture over noodles. Sprinkle with parsley.
    Makes 4 servings.
