Spinach-Cheese Casserole - cooking recipe

Ingredients
    1 (10 oz.) pkg. frozen chopped spinach
    1 medium onion, chopped
    2 tsp. reduced-calorie margarine, melted
    1 c. 1% low-fat cottage cheese
    1/4 c. (1 oz.) shredded low-fat process American cheese, divided
    1/8 tsp. ground nutmeg
    dash of pepper
    vegetable cooking spray
Preparation
    Cook spinach according to package directions, omitting salt; drain well.
    Saut onion in margarine in a medium nonstick skillet until tender.
    Add spinach, cottage cheese, 2 tablespoons shredded cheese, nutmeg and pepper; stir well.
    Spoon into a 1-quart casserole coated with cooking spray.
    Sprinkle with remaining 2 tablespoons shredded cheese.
    Bake at 350\u00b0 for 25 to 30 minutes or until set.
