Bacon 'N Egg Pancake Roll-Up - cooking recipe

Ingredients
    1 pkg. pancake mix
    16 slices bacon
    6 eggs, scrambled
    1/2 c. chopped, cooked onion
    1/2 c. chopped, cooked green pepper
Preparation
    Prepare pancake mix and fix two 8 or 9-inch pancakes.
    Cut 8 slices of bacon into pieces 1 inch long; pan-fry until browned. Drain.
    Cook 8 additional slices; drain and keep warm.
    Prepare favorite scrambled eggs using 6 eggs.
    Just before eggs are completely cooked, stir in bacon pieces, onion and green pepper. Spread each pancake with half of egg mixture.
    Roll up jelly roll fashion.
    Serve with remaining bacon slices and, if desired, garnish with apple slices.
    Yields 4 to 6 servings.
