Low-Fat Carrot-Raisin Salad - cooking recipe
Ingredients

2 c. coarsely shredded carrot
1/4 c. plus 2 Tbsp. raisins
1 (8 oz.) can crushed pineapple (in juice), drained
1/4 c. vanilla low-fat yogurt
1/8 tsp. ground cinnamon (optional)
Preparation

Combine carrots, raisins, pineapple, yogurt and cinnamon (optional) in a medium bowl.
Stir well.
Cover and chill thoroughly.
Yield:
6 servings.
