Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant
    olive oil
    salt
    1 1/2 c. chopped onion
    3 c. diced tomatoes
    1 lb. pork sausage
    1 1/2 c. bread crumbs
    1 tsp. paprika
    1/4 tsp. pepper
    1 tsp. nutmeg
    1 tsp. sweet basil
    1 tsp. Italian seasoning
    1 c. shredded cheese
Preparation
    Cut eggplant into 1/2-inch slices. Sprinkle with salt. Saut onions, tomatoes, paprika, pepper and spices. Add meat; cook 5 minutes. Rinse eggplant. Place alternate layers of meat mixture and eggplant in casserole dish, beginning and ending with meat. Cover with foil and bake 40 minutes at 350\u00b0. Remove foil and sprinkle with bread crumbs and cheese. Bake 10 minutes more.
