Leeks And Eggs Au Gratin - cooking recipe

Ingredients
    6 eggs
    1 lb. leeks
    3 oz. butter
    3 oz. mature Cheddar cheese, grated
    1 1/2 oz. plain flour
    3/4 pt. milk
    salt and pepper to taste
    1 Tbsp. grated Parmesan cheese
Preparation
    Place the eggs in a saucepan; cover with cold water.
    Bring to a boil, reduce heat and simmer for 7 minutes (yes, time them!). Remove from heat; immerse in cold water.
    Wash the leeks; cut them into 1/2-inch slices.
    Heat 1 ounce butter in a medium size saucepan.
    Add the leeks; allow to steam with the lid on for 5 to 6 minutes, or until just tender.
    Melt the remaining 2 ounces butter in a small saucepan.
    Add the flour and milk all at once. Bring to a boil, stirring constantly, until the sauce has thickened.
    Add 2 ounces grated cheese; continue stirring until the cheese has melted.
    Season with a little salt and pepper.
