Cheesy Tortilla Corn - cooking recipe

Ingredients
    1/2 c. sliced green onions
    1/2 c. chopped red pepper
    1/4 c. margarine, divided
    2 pkg. (10 oz. each) corn, thawed and drained
    1/2 lb. Velveeta, cubed
    2/3 c. crushed tortilla chips
    1/2 tsp. Mexican seasoning (optional)
    2 Tbsp. chopped cilantro
Preparation
    Cook and stir onions and red pepper in 2 tablespoons of margarine in a large skillet over medium-high heat until tender. Reduce heat to low.
    Stir in corn and Velveeta.
    Cook 5 to 7 minutes until cheese is melted and mixture is thoroughly heated, stirring occasionally.
    Melt remaining 2 tablespoons of margarine in separate pan.
    Stir in tortilla chips and seasoning.
    Cook over medium heat 3 minutes.
    Stir in cilantro.
    Spoon corn mixture into serving bowl.
    Sprinkle with tortilla mixture.
    Garnish with additional cilantro and red pepper, if desired.
