Gingerbread - cooking recipe
Ingredients

2 c. buttermilk baking mix
1/4 c. sugar
1 egg
3/4 c. hot water
2/3 c. dark molasses
1/3 c. shortening
1 tsp. cinnamon
1 tsp. ginger
Preparation

Beat all ingredients in a large mixer bowl on low speed, scraping bowl constantly, for 30 seconds.
Beat on medium speed for 3 minutes, scraping bowl occasionally.
Pour into greased and floured 9 x 9 x 2-inch pan.
Bake at 325\u00b0 for 50 minutes.
Serve with whipped cream or applesauce, if desired.
May be frozen up to 6 months.
Yields 1 loaf.
