Chicken Gumbo, Ham Or Veal - cooking recipe
Ingredients

1 lb. chicken, cut up, boned and cooked
2 c. okra
2 c. tomatoes
1/2 c. onion
1/2 c. peppers
salt and pepper to taste
Preparation

Saute peppers, onion and okra in plenty of chicken fat or butter.
Add meat, tomatoes and water according to whether you expect to make stew or soup.
Simmer gently for at least 2 hours. Waterless cooker is ideal as it conserves fluid.
Serve with rice cooked dry.
Splendid for a supper party as it can be prepared long before rush of last minute duties.
Ham and veal can also be used for gumbo instead of chicken.
