Farmer'S Casserole - cooking recipe

Ingredients
    1/2 c. uncooked rice
    1 c. boiling water
    1 tsp. salt
    1 1/2 lb. pork and beef, cubed
    1 1/2 c. celery, chopped
    1 1/2 c. onion, chopped
    1/2 c. green pepper, chopped
    1/2 c. pimento
    1 can cream of mushroom soup
    3 Tbsp. soy sauce
Preparation
    Place rice in at least a 3-quart casserole.
    Add boiling water and salt; set aside.
    Brown meat in 2 tablespoons oil.
    Add onion, celery and green pepper.
    Cook until tender.
    Mix pimento, soup and soy sauce.
    Mix with rice and blend gently.
    Cover and bake at 350\u00b0 for about 1 1/2 hours or until meat and rice are tender. Remove cover the last 15 minutes if a brown surface is desired.
