Cottage Cheese Fruit Bread - cooking recipe
Ingredients

2/3 c. dried apricots
2/3 c. dried prunes
1/3 c. butter
1/2 c. packed light brown sugar
2 eggs
1 Tbsp. each: grated lemon and orange rind
1 1/2 c. (12 oz.) cottage cheese
2 c. sifted flour (all-purpose)
2 tsp. baking powder
3/4 tsp. baking soda
3/4 tsp. salt
Preparation

Place apricots and prunes in a 1-quart saucepan.
Add water just to cover fruit.
Boil gently (uncovered) for about 30 minutes. All liquid will be absorbed.
Cool, then chop fruit.
Cream butter and sugar in large mixing bowl.
Add eggs, beating well, one at a time.
Add lemon and orange rinds and cottage cheese; beat well. Sift together flour, baking powder, baking soda and salt; combine into creamed mixture.
Fold in chopped fruits.
Spread into 2 well buttered 7 1/2 x 3 3/4 x 2 1/4-inch loaf pans.
Bake at 350\u00b0 for 45 to 50 minutes.
Allow to stand 10 minutes.
Remove from pans.
