Ingredients

2 1/2 lb. ripe tomatoes
1 lemon, thinly sliced
1/2 tsp. ground ginger
2 lb. sugar
Preparation

Sterilize 5 half-pint jars.
Peel tomatoes, chop coarsely and place in a 3-quart saucepan.
Add lemon and ginger.
Bring to boiling, reduce heat and simmer, uncovered, 1 hour.
Stir in sugar. Boil, uncovered and stirring often until thick, 25 to 30 minutes, or until candy thermometer registers 221\u00b0.
Ladle marmalade into hot jars.
Immediately cover with 1/8-inch hot paraffin wax.
Makes 5 pints.
