Scarlatti Scallop - cooking recipe

Ingredients
    4 medium zucchini
    2 tomatoes, cut into wedges
    1 small onion, chopped
    1/4 c. butter or margarine
    2 Tbsp. grated Parmesan cheese
    2 tsp. sugar
    1/2 tsp. salt
    1/4 tsp. oregano
    1/8 tsp. pepper
Preparation
    Preheat oven to 350\u00b0.
    Cut zucchini into 3 or 4-inch lengthwise sticks.
    Place in a 10-inch baking dish.
    Top with tomatoes.
    Sprinkle on onion and dot with butter or margarine. Combine cheese, sugar and seasonings.
    Sprinkle over vegetables. Bake for 50 to 60 minutes.

    Makes 6 to 8 servings.
