Sauerkraut Salad - cooking recipe

Ingredients
    1 can sauerkraut, drained (reserve liquid)
    1 c. chopped green pepper
    1 c. chopped celery
    1/2 c. chopped onion
    1 (4 oz.) can pimiento, chopped
    1/2 c. chopped or grated carrots
    1 c. sugar
    1/2 c. vinegar
    reserved liquid from sauerkraut
Preparation
    Mix sauerkraut, chopped green pepper, celery, onion, pimiento and carrots.
    In saucepan, combine sugar, vinegar and sauerkraut liquid.
    Boil over medium heat for 2 minutes.
    Remove from heat and pour over vegetable mixture, mixing well.
    Cover and refrigerate at least overnight.
    Makes 2 quarts.
