Seafood Gumbo - cooking recipe
Ingredients

6 Tbsp. flour
6 cloves garlic, chopped
1/2 c. chopped bell pepper
3 lb. peeled, raw shrimp
3 qt. water
1/4 bunch fresh parsley, chopped
3 bay leaves
2 doz. oysters
1/2 c. olive oil
1 c. onion, chopped
3/4 c. celery, chopped
1 (16 oz.) can tomato paste
1 lb. crabmeat
1/2 tsp. thyme
1 can or pkg. frozen okra
1 c. oyster liquid
salt and pepper to taste
Preparation

Make a roux with olive oil and flour.
Cook garlic until light brown.
Add onion, bell pepper and celery.
Saute 15 minutes, stirring frequently.
Add shrimp, tomato paste and water.
Mix well.
Add all ingredients except okra and oysters.
Cook 1 1/2 hours.
Add okra and cook 15 minutes.
Add oysters, cook another 15 minutes.
Serve over rice.
Serves 8.
