Five-Grain Cereal Loaf - cooking recipe

Ingredients
    1 c. 5-grain cereal
    1 1/2 c. nonfat buttermilk
    1 egg, beaten
    2 Tbsp. brown sugar
    2 Tbsp. plus 1 1/2 tsp. vegetable oil
    2 c. unbleached flour
    1 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. ground cinnamon
    1/4 tsp. salt
Preparation
    Stir together cereal and buttermilk and let stand 5 minutes. Add egg, sugar and vegetable oil, mixing well.
    Combine the rest of the ingredients in a large bowl, stirring well.
    Add to cereal mixture and stir until dry ingredients are moistened.
    Spoon batter into an 8 1/2 x 4 1/2 x 3-inch loaf pan that has been sprayed with vegetable cooking spray.
    Bake at 350\u00b0 for 45 to 50 minutes; a wooden pick inserted in center should come out clean.
    Cool 10 minutes in pan before removing.
    Yields 15 servings.
