Asian Peanut Dipping Sauce - cooking recipe
Ingredients

1/2 carrot, cut in 1/2 inch pieces
1 jalapeno pepper, halved, stemmed and seeded
3 green onions (green part only), quartered
2 Tbsp. pared, sliced fresh ginger
3/4 c. creamy peanut butter
2 Tbsp. reduced sodium soy sauce
1/3 c. water
Preparation

Combine carrots, jalapeno, green onion and ginger in food process. Whirl until finely chopped.
Add peanut butter, soy sauce and water.
Process until smooth, scraping down side of bowl as needed.
Add additional water if thinner consistency is desired. Serve immediately or refrigerate, covered for up to 1 day.
