Broccoli Rice - cooking recipe

Ingredients
    1 3/4 c. rice (may cook in chicken broth)
    3/4 c. onion, chopped
    3/4 c. green pepper, chopped
    1 c. celery, chopped (if desired)
    4 Tbsp. butter or margarine
    2 (10 oz.) pkg. frozen chopped broccoli
    8 oz. Velveeta cheese, broken into small pieces
    1 can cream of chicken soup
    1 can cream of mushroom soup
    1 (3 oz.) can mushrooms with juice (optional)
Preparation
    Cook rice; set aside.
    Saute onion, pepper and celery in butter.
    Cook broccoli.
    Combine everything; add the rice.
    Place in 1-quart casserole.
    Bake at 350\u00b0 until bubbly.
