Green Tomato Crisp Pickles - cooking recipe
Ingredients

7 lb. sliced green tomatoes *
2 gal. lime water (3 c. lime in 2 gal. water)
4 lb. sugar
2 qt. vinegar
1 tsp. each: ground cloves, allspice, mace, cinnamon, celery seed and salt
Preparation

Soak tomato slices for 24 hours
in lime water made by stirring 3 cups of pickling lime into 2 gallons of water.
Drain and rinse well under water.
Soak 4 hours in fresh cold water, changing water every hour.
Drain.
Make syrup of remaining ingredients.
When they begin to boil, pour over the drained tomatoes.
Let stand overnight.
In the morning, bring to a boil and boil for hour.
Put in jars and seal in sterilized jars.
Makes 9 or 10 pints.
