Date-Nut Refrigerator Bran Muffins - cooking recipe

Ingredients
    2 c. boiling water
    6 c. Shredded Wheat bran cereal
    2 1/2 c. sugar
    9 oz. salad oil
    4 eggs, beaten
    4 c. buttermilk
    5 c. flour
    5 tsp. baking soda
    1 tsp. salt
    2 c. chopped nuts
    2 c. chopped dates
Preparation
    In medium bowl, pour water over 2 cups cereal; allow mixture to cool.
    In a large bowl, blend sugar, oil, eggs and buttermilk; stir in dry and soaked cereal.
    Add in dry ingredients, then dates and nuts.
    Batter can be baked immediately or refrigerated in a tightly covered container up to 1 month.
    Use paper muffin cup liners. Spoon batter into muffin cup; allow to stand in pans while the oven heats.
    Bake at 375\u00b0 for 40 minutes.
    Makes about 60 muffins.
