Cranberry Fruit Nut Bread - cooking recipe

Ingredients
    2 c. all-purpose flour
    1 c. sugar
    1 1/2 tsp. double acting baking powder
    1/2 tsp. baking soda
    1 tsp. salt (optional)
    2 Tbsp. shortening or margarine
    3/4 c. orange juice
    1 Tbsp. grated orange rind
    1 egg, well beaten
    1/2 c chopped nuts
    1 1/2 c. chopped cranberries (fresh or frozen)
Preparation
    Mix together by hand flour, sugar, baking powder, baking soda and salt.
    Cut in 2 tablespoons shortening or margarine until mixture resembles coarse corn meal.
    Combine orange juice, orange rind and egg.
    Pour all at once into dry ingredients, mixing just enough to dampen.
    Carefully fold in nuts and cranberries.
    Spoon into greased and floured loaf pan (9 x 5 x 3-inch).
    Spread corners and sides slightly higher than center.
    Bake at 350\u00b0 for about 1 hour until crust is golden brown.
    Cool 10 minutes. Remove from pan.
    Place on cooling rack, top side up.
