Sunshine Carrots - cooking recipe

Ingredients
    7 to 8 medium carrots
    1 Tbsp. brown sugar
    1 tsp. cornstarch
    1/4 tsp. ground ginger
    1/4 c. orange juice
    1/4 tsp. salt
    2 Tbsp. butter
Preparation
    Cut carrots in 1/2 inch slices (bias sliced).
    Boil 10 to 20 minutes.
    In small saucepan combine brown sugar, cornstarch, ground ginger and salt.
    Add orange juice.
    Cook, stirring constantly until thick and bubbly.
    Boil for 1 minute.
    Remove from heat, stir in butter.
    Pour sauce over drained carrots.
    Sprinkle with parsley.
