Vidalia Corn Muffins - cooking recipe
Ingredients

1 1/2 lb. plain corn meal
1/2 c. all-purpose flour
1 tsp. baking powder
1 tsp. salt
1 c. milk
3 beaten eggs
1/3 c. vegetable oil
1 (7 oz.) can whole kernel corn, drained
1 c. shredded Cheddar cheese
2 to 4 baby Vidalia onions (bulbs and green tops chopped)
1 c. chunky salsa sauce (hot or mild)
Preparation

Sift dry ingredients together in a bowl.
Stir in remaining ingredients.
Mix well.
Bake in greased muffin tins for 20 to 30 minutes at 350\u00b0.
Serves 6 to 8.
