Vegetarian Chili - cooking recipe
Ingredients

1 medium onion, thinly sliced
1/2 green pepper, diced
2 Tbsp butter or margarine
1 clove minced garlic
2 Tbsp chili powder
1-28 oz can stewed, chopped tomatoes
3 cans kidney beans
1 1/2 C shredded cheddar
3 C cooked brown rice
1/2 C chopped green onions for garnish
Preparation

Saute onion and pepper in butter until tender.
Stir in garlic and chili powder.
Add tomatoes and beans with salt and pepper to taste.
Simmer 10 minutes.
Add cheese and cook until cheese melts, stirring often.
Add rice and serve.
