Fried Cucumbers - cooking recipe

Ingredients
    1 large cucumber
    1/2 c. bread crumbs, finely chopped
    1 egg, well beaten
    salt and pepper to taste
    oil for frying
Preparation
    Peel cucumber; cut in lengths and remove seeds.
    Cook in boiling water for 3 minutes; drain and cool.
    Dip carefully in beaten egg, then roll in crumbs.
    Fry in very little amount of cooking oil until brown on both sides.
    Serve at once.
    Yields 2 servings.
