Zucchini Casserole - cooking recipe

Ingredients
    4 c. shredded zucchini
    2 eggs, beaten
    salt and pepper to taste
    1 small onion, chopped
    1 pkg. Jiffy corn muffin mix
    8 oz. shredded Cheddar cheese
Preparation
    Mix 1/2 of cheese with the rest of the ingredients and pour into an 8-inch greased casserole.
    Top with the rest of the cheese and bake 1 hour at 350\u00b0.
