Red Beans And Rice - cooking recipe

Ingredients
    1 lb. red kidney beans
    1 ham bone or ham hocks
    1 large onion, chopped
    1/2 c. bell pepper, chopped
    2 garlic cloves, minced
    1 tsp. cumin powder
    red pepper to taste
    dash of Tabasco sauce
    salt to taste
    1 lb. smoked sausage, sliced
Preparation
    Wash and pick over beans, cover with cold water and soak overnight.
    Cover beans with 2 or 3 inches of water, using the water they soaked in.
    Add ham bone, onion, bell pepper, garlic, cumin powder, red pepper and Tabasco sauce.
    Cook slowly for several hours, about 3 or 4.
    Add salt after beans are tender. (The beans will make thick gravy.)
    About 20 minutes before beans are done, add sliced sausage.
    Serve over rice.
    Serves 8.
