Ratatouille Nicoise - cooking recipe

Ingredients
    1 eggplant
    1 zucchini
    6 tomatoes
    1 chopped onion
    4 Tbsp. olive oil
    1 minced clove garlic
    1 Tbsp. chopped parsley
    1 bay leaf
    salt and pepper to taste
Preparation
    Peel and cube eggplant and zucchini.
    Boil in water 10 minutes; drain.
    Peel and cut tomatoes.
    Brown onion in olive oil. Add vegetables, garlic, parsley, bay leaf, salt and pepper.
    Cook 10 minutes and move to shallow baking dish.
    Sprinkle with 1/2 cup Italian cheese and brown.
