Fat-Free Noodle Spinach Toss - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1 Tbsp. whipped butter
    2 c. spinach leaves, washed, trimmed, drained and chopped
    1 c. sliced shitake mushrooms
    4 small plum tomatoes, blanched, peeled, seeded and diced (optional)
    1 large clove garlic, minced
    1/2 c. canned ready to serve chicken broth
    2 c. cooked hot light and fluffy noodles (medium)
Preparation
    In 10-inch skillet, combine oil and butter; heat until butter is melted.
    Add spinach, mushrooms, tomatoes and garlic.
    Saute over high heat until mushrooms are lightly brown (2 to 3 minutes). Add broth and stir to combine.
    Reduce heat and cook until flavors blend (3 to 4 minutes).
    Add noodles to skillet and toss to combine with a fork.
