Confetti Rice - cooking recipe

Ingredients
    1/2 lb. sliced bacon, diced
    1 c. long grained rice, cooked
    1 c. parboiled diced carrots
    1 c. parboiled diced celery
    1/2 c. fresh or frozen peas
Preparation
    In large skillet, cook bacon until crisp.
    Drain all but 3 tablespoons of drippings.
    Add rice, carrots, celery and peas. Cook until heated through about 5 to 7 minutes.
    Stir in bacon. Can serve with soy sauce.
    Yields 6 to 8.
