Chicken Breast Diane - cooking recipe

Ingredients
    4 large or 8 small boneless chicken breast halves
    1/2 tsp. salt
    1/4 to 1/2 tsp. black pepper
    2 Tbsp. salad or olive oil
    2 Tbsp. butter or margarine
    3 Tbsp. chopped fresh chives or green onions
    juice of 1/2 lime or lemon
    1/4 c. chicken broth
    2 tsp. Dijon style mustard
    3 Tbsp. chopped parsley
    2 Tbsp. brandy or cognac (optional)
Preparation
    Place chicken breasts between sheets of waxed paper or plastic wrap.
    Pound slightly.
    Sprinkle with salt and pepper.
    In a microsafe dish, melt butter and mix with oil.
    Place chicken breasts in dish, coating breasts on both sides.
    Microwave on High power for 3 minutes.
    Let rest for 1 minute.
    Turn breasts over. Microwave again at High power for 3 minutes until chicken breasts are done, not overcooked.
    Set aside.
