Eggplant Dressing - cooking recipe

Ingredients
    1 medium eggplant, peeled and cut up
    1/2 can Ro-Tel tomatoes
    1/2 can mushroom soup
    1 egg
    1 tsp. salt
    1/4 tsp. pepper
    1 clove garlic
    1 medium onion
    1 green pepper
Preparation
    Peel and cut up eggplant.
    Add a little water and cook for 10 minutes.
    Drain it and mash it up.
    Add remainder of ingredients. Pour into greased casserole.
    Top with 1 1/2 cups grated cheese and 1 1/2 cups buttered crackers.
    Bake for 30 minutes at 350\u00b0.
