Carrot Cake - cooking recipe
Ingredients

3 c. flour (plain)
2 tsp. baking powder
1 tsp. soda
1 tsp. cinnamon
1/2 tsp. salt
4 c. grated carrots
1 c. butter or margarine, softened
1 c. brown sugar
1 c. sugar
4 eggs
2 Tbsp. lemon juice
2 Tbsp. orange juice
1 c. chopped nuts
1 c. raisins
2 Tbsp. grated lemon peel (optional)
2 Tbsp. grated orange peel (optional)
Preparation

Lightly grease and flour 10 x 4-inch tube pan.
Sift together all dry ingredients.
Grate 4 cups carrots.
Set oven to 350\u00b0.
In a large bowl, mix butter and sugar at high speed until light and fluffy.
At low speed, add flour mixture, 1/4 at a time, along with eggs, lemon and orange peels (optional) and juices.
Beat until smooth.
With a wooden spoon, fold in carrots, nuts and raisins.
Bake 60 minutes.
